Who knows how many times you’ve savored Pizza Chiena at your grandparents’ house!
What nostalgia! We want to make you happy! In Satriano di Lucania, Basilicata, on April 28th, the second edition of the Satrianese Pizza Chiena Festival will be held. This event is dedicated to the community-origin denomination product of Satriano’s gastronomic tradition.
The recipe calls for a filling of toma cheese, soppressata, eggs, and a mix of cheeses such as pecorino and grana. The pastry is made with flour, yeast, salt, and oil.
That’s how they prepare it in Satriano di Lucania! How did your grandparents prepare it instead?
